Sweet Potato Porridge



Today's meal is a yummy, delightful and very filling Sweet Potato porridge, I stumbled on this recipe from a young gentleman named Matthew who happens to be a truly amazing cook. He took the somewhat normal sweet potato and transformed it into something extraordinarily delicious.

In recreating this meal for Yomama's Kitchen some minor alterations were made just to amplify an already perfect meal to make it the absolute best porridge recipe out there, you can take my word for it. I would however still be posting the original recipe much later and you could try out the two recipes and comment on the recipe you prefer. So lets get cooking.

INGREDIENTS


  •  4 Tubers of Sweet Potatoes
  • 1 Tbspn of grounded crayfish
  • 1 Cooking spoon Olive oil
  • 1 Green bell pepper
  • 1 Red bell pepper
  • 1 Medium sized onion
  • 1 Clove of garlic
  • 2 Cooking spoons of blended tomatoes
  • 2 Cooking spoons of blended tomatoes
  • 3 Carrots
  • 3 Habanero peppers (Atarodo)
  • 3 Green beans (optional)
  • A pinch of salt (optional)
  • Seasoning




TIME TO COOK

1) Peel off the skin of the sweet potatoes, rinse and cut the potatoes into cubes.


2) Put the potatoes in a pot and fill with water, the water should be slightly above the potatoes, add a pinch of salt then put on medium heat to boil until soft.




3) While the potato is boiling, wash and chop your veggies into your desired shape (I chose short straight chops)


4) Check to see if your potato is ready by poking one with a knife, if the knife goes in without much resistance then its ready, avoid letting it get too soft. Drain out the excess water if any and set aside.

5) Put your pot on on medium heat and add your olive oil, once the oil heats up, add your onions and let it fry for about 2mins.

6) After frying the onions, add your garlic and veggies, blended tomatoes and let it all cook together for about 3mins.

7) Add the crayfish, seasoning, pinch of salt and stir (make sure to taste  to check if the seasoning is enough).

8) Finally add the potato and stir, mash a few potatoes by simply using the cooking spoon to press them against the pot, cover the pot and leave to cook for about 5-7mins.

9) Serve hot and enjoy your meal.
